Brown Stew Oxtail is a classic Jamaican dish! There are more than one way to make it but this “brown stew” version is what most people think of when they think of Jamaican Oxtail. It really is all about simmering the meat until tender. Better said,… until it is falling off the bone. This is a recipe that you can really add lots of love to because it’s a slow simmering dish that’s well worth the wait. You can make it with or without lima beans (also called butter beans). Either way you’ll love it! I have another oxtail recipe that’s a family favourite! It’s something I created and has curry powder as an ingredient, which adds a special touch.     Hi Marther; I was searching YouTube when I came across your recipes, Does recipe reminding me of my own mother recipe, And when I look at your picture and you too I thought it was my own mother, Look so close like my mother But I know you are not close my mother passed away, I like to cook however my mom didn’t have the time to finish teach me the Jamaican recipes, So I’m using you to finish teaching me how every time I go to your site just keep reminding me of my own mother, Keep cooking and for long long time.     I haven’t tried making this brown gravy oxtail yet, but I’m surprised your recipe doesn’t call for any allspice. Most of the other oxtail recipes I’ve seen use it. Any reason why you don’t?

    I already made your Ackee & codfish and jerk chicken. Both turned out WAY beyond my expectations! I live near a west Indian community in Toronto (Parkdale) and have tried most of the shops, but your jerk recipe turned out better than I’ve ever had before. I was shocked that I could make something so authentic tasting. Thank you! 🙂

      Thank you for your compliments and question. I don’t use allspice in my recipe because that’s not how I was taught to make it. This recipe is delicious without it but you’re welcome to include it. I’m sure it will enhance the flavour nicely.

    I’ve cooked the brown stew chicken twice. Your recipe is outstanding!!! Pre-seasoning the meat really locks in the flavor. I’m ready to try the oxtails and the fried chicken, now! Although I love the recipe, my house is overwhelmed by the heavy aroma of the brown stew cooking for two or three days after I prepare it. I think that it’s the onion or garlic. Any advice on lessening this effect?

      Hi Herbert,
      Glad to hear your enjoying my recipes! Frying food will leave a lingering aroma but, as you know, it doesn’t last forever. I recommend putting your exhaust fan on High and opening the windows while cooking as the best way to lessen the fumes. Enjoy!

    I was so pleased at how my Oxtails came out this weekend when i cooked them i loved them, i actually prayed they came out good, last time i cooked them was a waste of my money and time, they were awful. This time was a different story i can’t wait to cook them again thanks for sharing that recipe with everyone my husband and son loved them. Two thumbs up!!!!

    Happy New Year Miss Faye. I was viewing your video on how to prepare King Fish. I love King fish and I was impressed by your step by step instructions on how to cook it. Because the fish always falls apart when I cook it. But I will follow your instructions and I know I will do just fine.

    I tried making in the slow cooker using 3lbs of oxtails. I added diced onions, celery and carrots to the meat in the slow cooker as the the meat was cooking. I also added a chopped tomato. The meat cooked on high for 3 hours and low for an hour. The meat was falling off of the bone! I did not add the butter beans. I served with coconut rice and peas (brown pigeon peas). Very Good!
