This video below offers a good example of the traditional way to cook Jerk pork or chicken … on pimento wood. It was shot at Scotchies Jerk Center in Ocho Rios where I visited in March. In my case they wouldn’t let me see much and shied away when I asked about their cooking methods and secret sauce. I guess that’s why they call it a secret.
I was really happy to find this video, which shows behind the scenes so you can see just how it’s done. The Scotchies visit starts at 7:25. This week, I’ll be sharing my own jerk recipe and cooking tips so you can recreate this authentic jerk flavour at home in the oven or on your BBQ. Stay tuned this week for more everything jerk!
