This video below offers a good example of the traditional way to cook Jerk pork or chicken … on pimento wood. It was shot at Scotchies Jerk Center in Ocho Rios where I visited in March. In my case they wouldn’t let me see much and shied away when I asked about their cooking methods and secret sauce. I guess that’s why they call it a secret.
