Creamy Jamaican Coleslaw: In most places coleslaw is a summertime salad, but why not eat it year-round? It’s great to serve alongside most anything you put on the grill: jerk chicken, grilled fish, etc. But it’s also good beside curry chicken or curry goat. Coleslaw is a very easy salad to make, once you’ve shredded the cabbage and carrots that is. Even though I still shred and grate by hand – I’m old-fashioned, you know – I suggest using a food processor for a quicker job. This recipe is on the sweet side, just how Jamaicans like it! But I suggest you add sugar to taste. If you can, make it a few hours ahead so that the ingredients can marinate together for a salad full of flavour!
