Jamaican Coconut Chips Recipe

Port Antonio, Jamaica. The Coconut Chips made at Goblin Hill Villas are a weekly tradition. Every Saturday evening they’re served, along with Rum Punch, at the manager’s reception. “I make a lot of chips every week and there’s never enough. They disappear really fast so you need to come early,” says bartender Calvin Wellington. His Coconut Chips are so delicious we asked him if he could show us how he makes them, and he generosity obliged.

We found it’s best to salt the soaking water to your taste. We prefer a hint of salt that balances the coconut flavour, but you can make them as salty as you’d like. You can even omit the salt all together if you’re on a low-sodium diet. Sweet coconut chips also make a delicious snack.
