Potluck holiday dinners make it easy on the host

For me the Easter long weekend always marks the beginning of spring. This year we had a beautiful sunny Easter Sunday, and spring was definitely in the air. I no longer host our family for Easter. That “pleasure” now belongs to the next generation and, this year, my eldest daughter Diane hosted the feast at her family’s home. 

Nowadays ALL of our family gatherings are potlucks. It just makes it so much easier on the host and, frankly, gives no one an excuse not volunteer. As you can see from the photos there was a lot of different dishes on our Easter dinner table, which is another reason why I love potluck dinners. Even with all the variety, however, there are some recipes that are ALWAYS on the buffet table. Namely Rice and Peas (in this case, two kinds), Fried Plantains, and Macaroni and Cheese. My son-in-law’s smoked ham is a must-have at Easter. Who knows, maybe I’ll be able to squeeze the recipe out of him so I can share it with you one day!

However you spent the long weekend, I hope you enjoyed time with family and friends and ate delicious family favorites until “you belly buss.”
