Easy Trini Corn Pie Recipe

Trini Corn Pie is a dish that I first had when a friend, who’s parents are from Trinidad, brought it to a potluck dinner. It was a hit with everyone there. This recipe is one that I created after trying a few different recipes, and I think it’s on point. I was excited to show my mother how to make Trini Corn Pie since she hadn’t had it before. Well, as you’ll see in the video, she loves it! A perfect casserole side dish, Trini Corn Pie is perfect for a potluck buffet and goes well with fish and meat dishes. If you like Jamaican Turned Cornmeal or Coo Coo, a Bajan dish, you’ll really love Trini Corn Pie! Not only is it easy it’s colourful and delicious, too.

Easy Trini Corn Pie Recipe

Ingredients

1 Tbsp (15 mL) Cooking Oil
1 small Onion, chopped
1 large clove Garlic, minced
1 cup (250 mL) Carrots, grated
1 12-oz can (340 mL) Corn Kernels, drained
1 14-oz can (398 mL) Creamed Corn
1/4 cup (125 mL) Parsley, chopped
1 cup (250 mL) Evaporated Milk (or Whole Milk)
1 tsp (5 mL) Salt
1/2 tsp (2 mL) Black Pepper
3/4 cup (325 mL) Cornmeal
1 1/2 cups (500 mL) Cheddar Cheese, grated

Instructions

Preheat oven to 350°F or 160°C

Step 1: Set aside 1/2 cup of cheese for topping the pie.

Step 2: Heat cooking oil on medium-high and add onions, garlic cloves, carrots and sautee for 2 to 3 minutes or until onions are translucent

Step 3: Add cream style corn and drained kernel corn and stir in salt and black pepper.

Step 4: After 2 minutes, turn heat down to low. Stir in milk and 1 cup of cheese.

Step 5: Slowly add the cornmeal to the mixture and keep stirring. When the mixture comes away clean from the side of the pan, and the spoon stands in the mixture for a few seconds before falling to the side, then the mixture is ready for the oven, about 7 to 10 minutes.

Step 6: Pour the mixture into a greased baking dish (8″x 8″). Sprinkle top with 1/2 cup grated cheese. Place the dish on the middle rack of pre-heated oven and bake for 30 minutes, or until cheese is melted and golden brown.

Step 7: Remove pie from oven, and allow it to cool for about 15 minutes before serving.

Serves 9 to 12
