We love plantains any way you can make them! Fried, boiled, roasted or baked. This recipe for Cinnamon Baked Plantains is super easy because all you need to do is add some spices and pop the plantains in the oven for 15 minutes. The key to this recipe is the ripeness of the plantains. If you use semi-ripe plantains (minimal blemishes) you can baked them to eat as a starch similar to candied sweet potatoes. If the plantains are very ripe they’ll be sweet and soft and can be turned into a dessert by plopping a scoop of ice cream on top. Either way this recipe is super easy and delicious.

Cooking Tip: Baking plain plantains is a healthier way to cook them than frying. Just lightly coat with cooking oil, place in a baking pan and bake for about 15 minutes, or until soft.

Preheat oven to 350°F (180°C)

Ingredients
4 to 5 large Plantains
2 tsp (10 mL) Cinnamon
1/2 tsp (2 mL) Nutmeg
Pinch Salt
1/4 cup (60 mL) Brown sugar
2 Tbsp (30 mL) Cooking Oil

Instructions
1. Slice plantains in to 1-inch pieces
2. Mix cinnamon, nutmeg, salt and brown sugar together in small bowl; blend well
3. Toss plantains cooking oil and spices until well coated
4. Place plantains on greased baking sheet and bake for 15 minutes of until plantains are soft and golden
