Today is Good Friday and, as I’ve mentioned before, it’s a day I don’t cook. Instead I’ll fry the fish and bake the Easter buns  that we’ll eat today one and two days before. That was the case with the buns in this photo, taken by my husband Eddie, that I baked yesterday.

When my kids where young they loved Good Friday because they knew they wouldn’t have to do any chores or homework. Instead they’d get to eat Escovitch Fish with Jamaican hardough bread, and Easter Spice Bun with cheddar cheese all day long. Well, not much has changed. My daughters, son, and their families, will be coming by to eat and hang out, as usual. It’s always a relaxed and wonderful day to reconnect as a family and to mark the start of spring.

You should also know that I bake Easter buns several times during the year not just at Easter … that’s how good it is. However, it’s expected at Easter, and I wouldn’t have it any other way. From my family to yours (whether you celebrate Easter or Passover) all the best for the holiday weekend!
