A few years ago I made a traditional Jamaican Easter spice bun in my new bread machine. It turned out so well I use this version whenever I want to make one fast. A traditional Jamaican spice bun is dense, however, this version is lighter and more similar to the texture of bread or hot crossed buns. For those of you who have bread machines at home, you’ll find this recipe so easy you’ll make it again and again.

Ingredients

1 1/2 cup Warm Milk
2 Tbsp Butter or Margarine
1 tsp Salt
1/2 tsp Nutmeg
1/4 tsp Allspice
1 Tbsp Cinnamon
1 tsp Aniseed (optional)
1/4 cup Brown sugar (tightly packed)

Instructions

1. Place all the above in machine bread pan in same order as listed then add
the following ingredients:

3 cups Flour ( all purpose or bread machine flour)
2 tsps Yeast (fast rising or bread machine yeast)

2. Set machine to Sweet Bread setting and press start. (Some machines will start the kneading
process immediately and some machine has a delay time.)

3. Add next 2 ingredients when machine beeps for adding ingredients. If machine does have this
feature add about 7 minutes before kneading cycle ends:

1 cup Raisins
1/4 cup Mixed Peel (also called mixed fruit)

Let machine complete baking process. Remove bun from machine when done and place on a cooling rack.
