Fay grilling jerk chickenThe classic way to cook jerk is over hot coals and pimento wood. Well, most of us don’t have this set up at home so the next best thing is a barbecue. You can also use the oven but there’s nothing like the smokey flavour of a barbecue  can create.
 
My son-in-law, Les, is the king of the barbecue in our family … check out the video and you’ll see he really takes it seriously, too. Maybe one day he’ll even share his recipe for smoked ribs with all of us. They’re a knock out! Until then, I was happy when he agreed to share his chicken grilling tips. His best advice? Cook it low and slow … over indirect heat.
 
You’ll see in the video that the chicken was cooked to perfection … and I can’t even tell you how delicious  it was. You’ll have to find out for yourself when you make my Jerk Chicken Recipe.
