Plantains can be cooked in a variety of ways, including fried, boiled or roasted. However, I like fried, pressed green plantains. Unlike ripe plantains green plantains are not soft or sweet, but are also perfect paired with savory or saucy foods like callaloo or ackee and saltfish. They’re a great substitute for yams, rice or any starch.
Half way through the frying time you simply one by one you take them out of the pan and press them between two plantain skins, but that’s the traditional way. Today you can use aluminum foil with the same results. Either way it makes a very easy and tasty side dish.
