I’ve been having a great time making Jamaican recipes to share with you. But what I find most flattering and exciting is when you try one of my recipes and tell me how well it turned out, how delicious it was or how much your family loved it. Even more exciting is when I get a photo from you of one of my dishes that  you made.

The photo collage above is by my nephew, Nile, who lives in Florida and who made my Curry Chicken. He posted it on Facebook and I was really delighted to see his step-by-step photos! I noticed he used chicken breast … since he’s a college football player I guess he’s watching what he eats. Or maybe he just prefers chicken breast. Bone in or out, this recipe satisfies. Here’s what he said about the photo: “Thanks to my Aunt Fay I was able to make this curry chicken and it came out great.”

Elisabeth in North Carolina found me on YouTube and also ventured to try my Curry Chicken and Rice and Peas recipes. She liked it so much she wrote about “Cooking like a Jamaican” on her blog. This was extremely flattering to me because it was the first time that I really got to see how what I do in my little kitchen makes a difference for people. Elisabeth also made my Brown Stew Chicken recipe for her Father’s Day dinner. Here’s what she said:

“Fay, I made your Brown Stew Chicken recipe today for my belated Father’s Day Dinner with my dad. I tweaked it a little because I wanted to add some potatoes and carrots, but I loved it and so did he. Thank you again. You know I’ll be snooping around for the next recipe. And of course, you know I blogged about it: Happy Father’s Day — Jamaican Style.”

I look forward to getting many more photos and feedback from you all. My hope is that I will be able to feature more of them here. Also, don’t be afraid to let me know if something doesn’t turn out how I promised. We can all learn from a recipe gone wrong.
